Tasting notes:

Dona Paula Unique Malbec. An, un-oaked, organic Malbec, bright with red fruit, cherry and plum, and a backbone of chocolate, coffee, olives and spice.

Food Match:

Pair with roasted pork and dark meat chicken or turkey. Also works well with creamy mushroom sauces and cheese, especially blue cheese.

Producer/Region:

Established in 1997, Doña Paula, is considered an Estate winery since 100% of the grapes used to produce their wines come from their own vineyards. The thorough care for details in their vineyards guarantees a constant quality and a style of their own that shows the clearest expression of each terroir.

Los Cerezos vineyard, located in the Cordón del Plata, Tupungato, Uco Valley. It is their first certified organic vineyard, located at 1,000 meters above sea level. Its soil is loam, of variable depth, with a layer of calcium carbonate 120 cm from the surface. It presents warm days and cool nights, with a thermal amplitude of 14 degrees and an annual rainfall average of 280 mm. The yield per hectare is 12 tons, with a trellis conduction system, and drip irrigation. At Doña Paula they have always managed our vineyards with sustainable agricultural practices.

Vinification:

This wine is made with organic grapes. The harvest, in which oxidation is avoided, is carried out during the first days of March. Alcoholic fermentation occurs with native yeasts and is aged in steel tanks. It is not aged in oak, which accentuates the fruity character of Malbec. No synthetic chemical additives are applied during the process, both in the vineyard and during its production.
