Tasting notes: Adobe Reserva Cabernet Sauvignon

Adobe Reserva Cabernet Sauvignon has attractive aromas of blackberry accompanied by spicy notes. Therefore the palate is concentrated and smooth with vibrant plum, red fruit and a delicate herbal note. As a result the tannins are ripe and provide welcome grip and structure.

Food Matching:

This wine is ideal with well-seasoned, strong-flavoured dishes, stuffed cannelloni, grilled beef, pork, or poultry. It also goes very nicely with ripe cheeses, salami, ham, and pastrami.

 

Producer/Region:

The Central Valley wine zone extends from the Maipo Valley in the north to the Maule Valley in the south. Therefore the entire zone has good drainage, high fertility, and tremendous agricultural aptitude. Especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures. And cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth. The grapes were hand picked in middle April and undergo a week-long pre-fermentation cold soak  to extract fresh fruit characteristics.

Firstly, alcoholic fermentation took place at 25º–28ºC with daily pump overs. The wine stays on its skins for a period of time. Secondly the free run wine was separated from its skins, natural malolactic fermentation takes place. 20% of this wine was aged in oak barrels for 6 months and later re blended to achieve a more complex character.

Colchagua Valley is part of the Rapel Valley, thanks to a singular mix of ocean breezes and winds from the Andes Mountains. So Colchagua is the perfect place to cultivate red varieties like Syrah, Carmenere, Cabernet Sauvignon, and Merlot. Here, the four seasons of the year are accentuated, allowing the grapes to ripen evenly and slowly. Their Las Palmeras and Los Robles cellars are located here, built with the highest levels of infrastructure, minimizing their environmental impact.
