Tasting notes:

Painted Wolf Madach Cape ‘hunting’ Red. Bright ruby red. Nose is compact with brooding red fruit and spicy wood. The palate is round and supple with red fruit flavour accented by spicy wood. It is a deeply satisfying wine.

Food Match:

Robust dishes influenced by the southern French and Spanish kitchen such as ratatouille, braised beef shanks with orange and green olives.

Producer/Region:

In 2006, Emma and Jeremy Borg decided to create a wine company with two main aims. One, to raise money to build a more hopeful future for endangered African wild dogs and to allow Jeremy to pursue his ambitions as a winemaker. Which he has done with great determination and flair.

Creating the company involved many wonderful collaborations with friends from all walks of life. Vineyard/Winemaking:

The pinotage was crushed and fermented in a roto tank before being decanted into oak barrels, durif, Tempranillo and Grenache were are destemmed and crushed into small open fermented with approx 10% whole bunches. Natural yeast has been used . They did 4- 6 punch downs a day. Pressed into barrel The carignan was fermented in an open fermenter and aged in a flex cube with french oak staves. Wine was assembled in Feb 2019 and held in tank for 6 months before being bottled
